Oven Roasted Sweet Potatoes


A flavorful change from regular fries - and a great source of nutrition! Make them as spicy as you like - or not - whichever your family prefers.


4 medium sweet potatoes
1 tablespoon olive oil
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2-3 cloves garlic, minced


Preparation Directions
Cut the potatoes into thin wedges
Place the wedges in a bowl covered with cold water
Set aside for 15 minutes
Preheat oven to 375 F
Drain the potatoes and dry them with paper towels
Use paper towels to press the potatoes to remove all water
Put the potato wedges in a large bowl
Coat them with oil, tossing well to cover the potatoes
Sprinkle with pepper, salt, paprika and cayenne pepper
Coat a baking sheet with vegetable spray
Evenly spread the potato wedges on the sheet
Bake at 375 for 20 minutes
Turn the potatoes over and sprinkle with garlic

Continue cooking for another 15-20 minutes or until crisp and brown
